Ingredients
- 2 tablespoon Sriracha sauce
- 2 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 inch Fresh ginger peeled and finely grated
- 1 clove garlic finely grated
- 3/4 lb Pork tenderloin sliced very thin
- 3 tbsp Extra-virgin olive oil
- 12 oz Baby spinach
- 2 carrots peeled and sliced into 1/4 inch rounds
Instructions
- Preheat oven to 375 degrees. Toss carrots with salt, pepper, and 1 tbsp olive oil. Place on a baking sheet and roast for 15 - 20 minutes or until carrots are tender.
- Combine sriracha, soy sauce, brown sugar, ginger, and garlic and pour over sliced pork. Let marinate for 20 minutes.
- Heat a good searing skillet (such as cast iron) over high heat. Add just a little bit of olive oil.
- When the oil is hot and shiny, add the pork in a single layer (you may need to do this in batches). Cook, undisturbed, for 1-2 minutes until you are getting that nice caramelized look. Flip and repeat to finish.
- Put pork on the side to rest for a few minutes while you saute the spinach in the same pan as the pork and serve.
