Shaved Pork Tenderloin

w/ Spinach and Roasted Carrots

Ingredients

  • 2 tablespoon Sriracha sauce
  • 2 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 inch Fresh ginger peeled and finely grated
  • 1 clove garlic finely grated
  • 3/4 lb Pork tenderloin sliced very thin
  • 3 tbsp Extra-virgin olive oil
  • 12 oz Baby spinach
  • 2 carrots peeled and sliced into 1/4 inch rounds

Instructions

  • Preheat oven to 375 degrees. Toss carrots with salt, pepper, and 1 tbsp olive oil. Place on a baking sheet and roast for 15 - 20 minutes or until carrots are tender.
  • Combine sriracha, soy sauce, brown sugar, ginger, and garlic and pour over sliced pork. Let marinate for 20 minutes.
  • Heat a good searing skillet (such as cast iron) over high heat. Add just a little bit of olive oil.
  • When the oil is hot and shiny, add the pork in a single layer (you may need to do this in batches). Cook, undisturbed, for 1-2 minutes until you are getting that nice caramelized look. Flip and repeat to finish.
  • Put pork on the side to rest for a few minutes while you saute the spinach in the same pan as the pork and serve.
