Ingredients

Orange Juice

  • 10 - 12 Oranges refrigerated so they're cold (About 5 to 6 oranges yield an 8oz glass of OJ).

Bagel and Eggs

  • 2 Everything bagel or bagel of your choice halved and toasted
  • 6 TBSP Cream cheese
  • 4 Eggs beaten
  • 2 TBSP Butter

Fruit:

  • 2 cups Mixed fruit prepared accordingly (berries; sliced apples; bananas; etc.)

Instructions

  • Place the oranges in the refrigerator the night before. Allow them to chill overnight.
  • In the morning, slice the oranges in half and juice with a citrus reamer, or squeeze by hand. Remove any seeds. Pour the juice into a glass.
  • Slice the bagels and toast them until golden brown.
  • Spread the cream cheese on each half of the toasted bagels.
  • Crack the eggs into a mixing bowl and whisk them together. Season with salt and pepper according to taste.
  • Heat a skillet over medium heat and melt the butter.
  • Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and cooked to your preferred consistency. Remove from heat.
  • Wash and slice the assorted fruit as desired and arrange it on serving plates.
  • Serve the bagel with eggs, fruit, and orange juice.
