Roasted Turkey Breast for Deli Sandwiches

- 1 Whole turkey breast bone in breast- no wings or drumsticks
- 2 tbsp Extra-virgin olive oil
- 1 Tbsp Dried thyme
Instructions
- Make sure the turkey is fully defrosted before cooking.
- Preheat oven to 350°F.
- Rinse turkey with cold water and pat dry.
- Drizzle with olive oil and season very well with thyme, salt, and pepper
- Position the turkey, breast side up on a parchment paper-lined baking sheet or in a roasting pan so that it does not fall over. Cook for 15 minutes per pound. (Example: an 8 lb. turkey breast will cook for an estimated time of 2 hours.)
- Cook to an internal temperature of 155°F by using a thermometer in the middle of the thickest portion of the breast. (You don't want the tip of the thermometer to be near any bones or it will give an inaccurate reading.)
- Allow the turkey to rest for about 15 minutes before removing the breast meat. (See video.)
