Ingredients

  • 1 tbsp Butter
  • 1 tbsp Fresh chives minced, plus more for garnish
  • 1 clove Garlic grated
  • 1/2 tsp Fresh sage
  • 8 oz Red snapper skin on, check for pin bones
  • 2 tsp Extra-virgin olive oil
  • 2 slices Crusty bread toasted

Instructions

  • Preheat the oven to 400ºF.
  • In a bowl mash together the butter, scallions, garlic, and cajun. Set aside.
  • Pat the cod dry with paper towels. Drizzle with oil and season with paprika, salt, and pepper. Place on a baking sheet and cook to an internal temperature of 135 degrees using a thermometer.
  • Serve with bread. Garnish with scallions. Top with cajun butter.
