Ingredients
- 6 oz Mahi Mahi skin off 4oz portions (skin off, feel around the surface to make sure all pin bones have been removed)
- 2 tbsp Cajun seasoning use as needed, may not need it all
- 1/4 cup Grape tomatoes diced small
- 1 tbsp Red onion finely diced
- 1 clove Garlic minced
- 2 tsp Lime juice
- 2 tsp Honey
- 1 tbsp Fresh cilantro chopped
- 2 tbsp Extra-virgin olive oil
- 2 slices Crusty bread toasted
Instructions
- Preheat the oven to 375 degrees. Season the top side of the mahi mahi with cajun seasoning and salt.
- Mix together the tomatoes, onion, garlic, lime juice, honey, and cilantro. Season with salt and pepper to taste. Adjust the lime juice or honey as needed (its better to add a little at a time to taste than all at once). Then set aside.
- Heat an oven safe saute pan over medium heat. Once hot, add the oil. Place the mahi into the pan seasoned side down. Cook, undisturbed, for 2 to 3 minutes, until deep golden brown. Then flip over. Place the pan into the oven and cook to an internal temperature of 145 degrees using a thermometer.
- Once done, set on a cutting board to rest for 2 to 3 minutes.
- Spoon the tomato chutney over the mahi. Serve with bread.
