Blackened Mahi Mahi

Ingredients

  • 6 oz Mahi Mahi skin off 4oz portions (skin off, feel around the surface to make sure all pin bones have been removed)
  • 2 tbsp Cajun seasoning use as needed, may not need it all
  • 1/4 cup Grape tomatoes diced small
  • 1 tbsp Red onion finely diced
  • 1 clove Garlic minced
  • 2 tsp Lime juice
  • 2 tsp Honey
  • 1 tbsp Fresh cilantro chopped
  • 2 tbsp Extra-virgin olive oil
  • 2 slices Crusty bread toasted

Instructions

  • Preheat the oven to 375 degrees. Season the top side of the mahi mahi with cajun seasoning and salt.
  • Mix together the tomatoes, onion, garlic, lime juice, honey, and cilantro. Season with salt and pepper to taste. Adjust the lime juice or honey as needed (its better to add a little at a time to taste than all at once). Then set aside.
  • Heat an oven safe saute pan over medium heat. Once hot, add the oil. Place the mahi into the pan seasoned side down. Cook, undisturbed, for 2 to 3 minutes, until deep golden brown. Then flip over. Place the pan into the oven and cook to an internal temperature of 145 degrees using a thermometer.
  • Once done, set on a cutting board to rest for 2 to 3 minutes.
  • Spoon the tomato chutney over the mahi. Serve with bread.
