Ingredients

  • 3/4 cup Chicken broth
  • 1/2 cup Crushed tomatoes
  • 1 tsp Garlic powder
  • 2 tbsp Hot sauce
  • 3/4 pound Chicken breast boneless skinless
  • 8 slices Texas toast
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Pickles sliced, or more if desired
  • 2 oz Potato chips

Instructions

  • In a pot over medium heat, add the broth, tomato, garlic powder, hot sauce, and season well with salt and pepper. Whisk until combined. Add the chicken and cover with a lid. Bring to a simmer until the chicken reaches an internal temperature of 160°F using a thermometer.
  • Remove the chicken, using 2 forks pull the chicken apart to shred. Return the chicken to the pot and continue to simmer to absorb more flavor. Adjust the seasoning with salt and pepper to taste.
  • Preheat the oven broiler on low. Toast the bread to golden brown.
  • Place the shredded chicken on one slice of bread and top with cheese. Place under the broiler to melt the cheese.
  • Top with pickles and drizzle with a little of the sauce in the pot. Serve with chips.
