Ingredients

Ramen

  • 2 Eggs
  • 6 oz Ramen noodles
  • 2 TBSP Vegetable oil
  • 6 oz Pork tenderloin thinly sliced
  • 2 cloves Garlic minced
  • 2 Fresh ginger inch-piece, sliced
  • 4 cups Beef broth
  • 2 TBSP Reduced sodium soy sauce
  • 2 TBSP Mirin sub rice wine vinegar
  • 2 Scallions chopped
  • 1 Nori seaweed sheets cut into thin strips
  • Salt to taste
  • Black pepper to taste

Iced Tea

  • 24 oz Iced tea cold

Instructions

  • Prep the ingredients per instructions above.
  • Start by boiling the eggs: Bring a small pot of water to a boil. Carefully add the eggs and cook for exactly 6 minutes for a soft-boiled egg or 8 minutes for a hard boiled egg. Remove the eggs and place them in cold water to stop the cooking process. Once cooled, peel and set them aside.
  • Prepare the pork: Heat a pot over medium-high heat and add the vegetable oil. Add the pork and cook until browned on both sides, about 2 minutes per side. Remove the pork and set it aside.
  • Make the broth: In the same pot, add minced garlic and ginger. Sauté for about 30 seconds until fragrant. Pour in the broth, soy sauce, and mirin. Bring to a boil. Add the ramen noodles and cook until tender. Refer the package instructions for cooking time. Then stir in the nori.
  • Assemble the ramen: Portion into bowls. Arrange the sliced pork, halved soft-boiled eggs, and chopped scallions on top. Season with salt and pepper to taste.
  • Serve the pork ramen with iced tea.
