Prep the ingredients per instructions above.
Start by boiling the eggs: Bring a small pot of water to a boil. Carefully add the eggs and cook for exactly 6 minutes for a soft-boiled egg or 8 minutes for a hard boiled egg. Remove the eggs and place them in cold water to stop the cooking process. Once cooled, peel and set them aside.
Prepare the pork: Heat a pot over medium-high heat and add the vegetable oil. Add the pork and cook until browned on both sides, about 2 minutes per side. Remove the pork and set it aside.
Make the broth: In the same pot, add minced garlic and ginger. Sauté for about 30 seconds until fragrant. Pour in the broth, soy sauce, and mirin. Bring to a boil. Add the ramen noodles and cook until tender. Refer the package instructions for cooking time. Then stir in the nori.
Assemble the ramen: Portion into bowls. Arrange the sliced pork, halved soft-boiled eggs, and chopped scallions on top. Season with salt and pepper to taste.
Serve the pork ramen with iced tea.
