Pickled Onion Arugula Salad

Ingredients

  • 2 tbsp Red onion sliced thin
  • 3 tbsp Red wine vinegar
  • 2 cups Arugula lightly rinsed if sandy and dried
  • 2 tsp Gold raisins
  • 1/2 tbsp Pine nuts
  • 2 tsp Creamy Italian dressing

Instructions

  • Submerge the onion in the vinegar. Let sit, drain well right before serving.
  • Place a bed of arugula on a plate with raisins, pine nuts, and onion on top and dress the salad right before serving.
