Ingredients

  • 4 oz Fusilli pasta substitute whole wheat pasta if desired
  • 6 oz Turkey Sausage Links
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion minced
  • 2 cloves Garlic sliced
  • 1 cup Grape tomatoes halved
  • 1/2 cup Artichoke hearts cut into bite sized pieces
  • 1/4 cup Kalamata olives halved
  • 1 cup Zucchini sliced into bite sized pieces
  • 1 cup Yellow squash sliced into bite sized pieces
  • 2 tbsp White wine optional
  • 1 tbsp Butter
  • 2 tbsp Goat cheese
  • 2 tbsp Fresh basil chopped
  • 2 slices Crusty bread toasted

Instructions

  • Preheat the oven to 400 degrees.
  • In a pot of salted boiling water, cook the pasta according to the directions on the package. Drain well then set aside.
  • Cook the sausage in the oven to an internal temperature of 155 degrees using a thermometer. Rotate halfway through cooking to get an even brown on all sides. Let rest for 1 to 2 minutes before chopping into small pieces.
  • Heat a saute pan on medium heat. Once hot, add the oil. Saute the onion, garlic, tomato, artichoke, olives, zucchini, and squash until golden brown. Stir in the wine and butter. Add the sausage to the pan and bring to a low simmer to build flavor.
  • Stir in the pasta and goat cheese until everything is combined well. Season with salt and pepper to taste. Then remove from the heat.
  • Stir in the basil, serve with bread.
