Ingredients
- 1/2 cup Artichoke hearts drained and chopped
- 1/2 cup Tomato diced
- 3/4 cup Cucumber chopped
- 2 tbsp Red onion diced
- 1/4 cup Kalamata olives halved
- 3 tsp Extra-virgin olive oil
- 1 tsp Red wine vinegar
- 1/2 tsp Dried oregano
Instructions
- Mix all ingredients in a bowl and season with salt and pepper to taste. Refrigerate until ready to serve.
