Ingredients

  • 1/2 cup Artichoke hearts drained and chopped
  • 1/2 cup Tomato diced
  • 3/4 cup Cucumber chopped
  • 2 tbsp Red onion diced
  • 1/4 cup Kalamata olives halved
  • 3 tsp Extra-virgin olive oil
  • 1 tsp Red wine vinegar
  • 1/2 tsp Dried oregano

Instructions

  • Mix all ingredients in a bowl and season with salt and pepper to taste. Refrigerate until ready to serve.
