Corned Beef Hash

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion finely diced
  • 1/2 Green bell pepper seeded and diced small
  • 8 oz Deli corned beef very finely chopped
  • 2 tbsp Butter

Instructions

  • Heat the oil in a non-stick pan over medium heat. Add the onions and peppers. Sauté until the onions and pepper are soft. Add the corned beef and butter.
  • Turn the heat to medium-low and continue to cook, stirring occasionally for 5-6 minutes. Taste and season with salt and pepper before serving.

Notes

* Alternatively you can purchase canned corned beef hash from the grocery store.
