Ingredients
- 1 tbsp Extra-virgin olive oil
- 2 tbsp Onion finely diced
- 1/2 Green bell pepper seeded and diced small
- 8 oz Deli corned beef very finely chopped
- 2 tbsp Butter
Instructions
- Heat the oil in a non-stick pan over medium heat. Add the onions and peppers. Sauté until the onions and pepper are soft. Add the corned beef and butter.
- Turn the heat to medium-low and continue to cook, stirring occasionally for 5-6 minutes. Taste and season with salt and pepper before serving.
Notes
* Alternatively you can purchase canned corned beef hash from the grocery store.
