Ingredients

Maine Lobster Roll

  • 8 oz Cooked lobster meat chopped
  • 2 TBSP Mayonnaise
  • 1 TBSP Lemon juice
  • 1 TBSP Fresh chives chopped
  • Salt to taste
  • Black pepper to taste
  • 4 Hot dog buns
  • 1 TBSP Butter melted
  • Romaine lettuce shredded optional
  • 2 oz Potato chips

Homemade Lemonade

  • 16 oz Water cold
  • 1 cup Lemon juice freshly squeezed
  • 2 TBSP Granulated sugar (adjust to taste)
  • Ice cubes

Instructions

  • If the lobster tails are not already cooked, steam or boil them until the meat is opaque and firm. Remove the meat from the shells and chop it into bite-sized pieces.
  • In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, chives, salt, and pepper. Mix well to coat the lobster meat evenly with the dressing.
  • Preheat a skillet or griddle over medium heat. Brush the inside surfaces of the New England-style hot dog buns with melted butter.
  • Toast the buns in the skillet or griddle until they are golden brown on both sides.
  • Line each toasted bun with lettuce leaves optional. Divide the lobster mixture equally between the buns, filling them generously.
  • Mix the ingredients together for the lemonade.
  • Serve the Maine lobster rolls with chips and homemade lemonade.
