Ingredients
- 2 tsp Red onion minced or grated
- 1 tsp Red wine vinegar
- 2 Avocados Peeled & Pitted
- 1 tsp Ground cumin
- 2 tbsp Fresh cilantro Chopped
- 1 tbsp Lime juice or more if needed to taste
- 2 Everything bagel lightly toasted (or bread of your preference)
- 2 tsp Extra-virgin olive oil
- 8 Eggs beaten
- 4 slices Smoked salmon about 1 oz per portion, should come thinly pre sliced
- 2 cups Cantaloupe cut into bitesized pieces (Check the Fruit guide to substitute seasonal fruits)
- ½ tsp Red pepper flakes (Optional)
Instructions
- In a bowl mix the onion and vinegar. Let sit.
- In a bowl, mash the avocado with a fork until smooth. Mix in the cumin, cilantro and lime. Season with salt and pepper to taste. Adjust any of the ingredients to your liking. Then spread onto the bagel.
- Heat a nonstick pan over medium heat. Once hot, Add the oil and eggs. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with pepper. Taste and add salt if needed.
- Place the eggs over the avocado, top with sliced salmon and onions, serve with cantaloupe. Garnish with red pepper flakes or cracked pepper.
