Ingredients
Maine Lobster Roll
- 8 oz Cooked lobster meat chopped
- 2 TBSP Mayonnaise
- 1 TBSP Lemon juice
- 1 TBSP Fresh chives chopped
- Salt to taste
- Black pepper to taste
- 4 Hot dog buns
- 1 TBSP Butter melted
- Romaine lettuce shredded (optional)
Pineapple Spritzer
- 12 oz Pineapple juice cold
- 12 oz Sparkling water
Cheese and Crackers
- 2 oz Brie cheese sliced
- 2 oz Parmigiano-reggiano cheese sliced
- Crackers
Instructions
- In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, chives, salt, and pepper. Mix well to coat the lobster meat evenly with the dressing.
- Preheat a skillet or griddle over medium heat. Brush the inside surfaces of the New England-style hot dog buns with melted butter.
- Toast the buns in the skillet or griddle until they are golden brown on both sides.
- Line each toasted bun with lettuce leaves (optional). Divide the lobster mixture equally between the buns, filling them generously.
- Mix the pineapple juice and sparkling water.
- Serve the Maine lobster rolls with cheese and crackers and pineapple juice spritzer.
