Ingredients

  • 3 tbsp Extra-virgin olive oil
  • 1/2 cup Red bell pepper chopped
  • 1 cup Onion sliced
  • 1 cup Mushrooms chopped
  • 3/4 lb Chicken breast boneless skinless sliced thin
  • 3 cloves Garlic minced
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/2 cup Chicken broth
  • 1 tbsp Lime juice
  • 8 leaves Bibb lettuce
  • 4 tsp Buffalo wing sauce (Mild) optional
  • 2 tbsp Scallions chopped

Instructions

  • Heat a non-stick pan over medium heat. Once hot, add the oil, peppers, onions, and mushrooms. Saute until softened. Next add in the chicken, garlic, paprika, and chili powder. Cook until the chicken is nicely brown. Season with salt and pepper to taste.
  • Add in the broth and lime juice. Simmer until the flavors blend and the chicken is no longer pink in the middle. Remove from the heat and adjust the seasoning as needed.
  • Place the chicken onto the lettuce. Drizzle with buffalo sauce if desired. Garnish with scallions.
