Ingredients

For the simple syrup:

  • 1 cup Water
  • 1 cup Granulated sugar

For the boba pearls:

  • 1 cup Tapioca pearls
  • 3 quarts Water

For the tea:

  • 5 TBSP Black Tea
  • 8 cups Water
  • 1/2 cup Ice cubes
  • 1/2 cup Milk
  • 2 Boba straw

Rice:

  • 1 cup Sushi rice
  • 1 1/4 cups Water
  • pinch Salt
  • 1/2 TBSP Sesame oil

Vegetables:

  • 2 TBSP Carrots minced
  • 2 TBSP Cucumber minced
  • 2 TBSP Radish minced
  • 1/2 TBSP Extra-virgin olive oil

Diluted vinegar:

  • 1/2 TBSP Rice wine vinegar
  • 2 tsp Water

Seasoning sauce:

  • 3/4 TBSP Reduced-sodium soy sauce
  • 1/2 TBSP Water
  • 1/4 TBSP Sugar
  • 1/2 tsp Rice wine vinegar

Meat:

  • 4 oz Ground beef
  • 1 tsp Reduced-sodium soy sauce
  • 1/4 tsp Sugar
  • 1/4 tsp Scallions chopped
  • 1/8 tsp Garlic minced
  • 1/2 tsp Salt
  • 1/4 tsp Sesame oil

EGGS:

  • 2 Eggs
  • 1/8 tsp Salt

Other:

  • 2 sheets Nori seaweed sheets
  • 1 TBSP Sesame oil

Kimchi:

  • 1 cup Kimchi

Instructions

  • Make the simple syrup: Add water and sugar to a saucepan over medium heat. Once the sugar completely dissolves, your simple syrup is ready to use or store in a clean jar.
  • Make the pearls: In a separate saucepan, cook the tapioca pearls in boiling water for 5 to 8 minutes. Once cooked, remove the pearls from the hot water. Transfer them to a bowl of iced cold water for 2 minutes. Remove your boba from the water and mix it with half of the simple syrup.
  • Steep the tea leaves in boiled water for about 5 to 10 minutes. Remove the tea leaves according to your desired strength.
  • Prep the ingredients per the instructions above.
  • Start with washing the rice thoroughly. Cook the rice according to the directions on the package then set aside to cool. Season with salt and sesame oil.
  • Mix all the ingredients for the meat. Set aside.
  • Whisk 2 eggs with 1/4 tsp salt.
  • Lightly oil and heat a frying pan. First, stir-fry the carrot and then the cucumber for 30 seconds each over high heat. add seasoning sauce, and stir-fry over low heat for another 5 minutes. Next, stir-fry the beef over medium heat for 2 minutes. Finally, fry the beaten egg on low heat for 3 minutes, then turn it over and fry for 2 more minutes. Remove the egg from the pan and cut it into strips.
  • Place the nori onto the rolling mat. Apply an even layer of rice on top. Place carrot, cucumber, radish, beef, and fried eggs in the middle. Roll gently into a log.
  • Slice into 1/2-inch-wide pieces and serve. Clean the knife with a wet towel after each slice.
  • Finish the boba tea: Pour the ice, simple syrup, tea, and milk into a glass. Add the tapioca pearls. Serve your bubble tea with a boba straw.
  • Serve with kimchi and bubble tea.
