Ingredients
Hummus - or use store bought
- 1/2 can Chickpeas Drained and rinsed
- 1 Tbsp Tahini paste
- 1/4 Lemon Juice squeezed
- 2 tbsp Extra-virgin olive oil Extra virgin
- 1 tsp Ground cumin
- Cold Water as needed
Flatbread
- 3 Pita bread 6 inch
- 2 oz Baby spinach
- 1/4 Red onion sliced thin
- 3 oz Goat cheese crumbled
- 1/4 can black olive sliced
Instructions
For Hummus
- In a food processor combine chickpeas, tahini, lemon juice, cumin, olive oil, salt & pepper. Drizzle cold water a little at a time to smooth out and reach the desired texture.
Flatbread
- Preheat oven to 400 degrees
- Spread a decent layer of hummus on flatbread, top with spinach, onion, goat cheese, olives.
- Bake for 7 - 8 minutes or to your desired crispiness.
