Ingredients
Sandwich
- 1 TBSP Extra-virgin olive oil
- 1/2 cup Green bell pepper diced
- 1/2 cup Red bell pepper diced
- 1/3 cup Onion diced
- Salt
- Black pepper
- 2 Italian Sausage Links about 4 oz per link
- 2 Long buns top sliced bun or slice a bun on top about 3/4 of the way through (if needed cut the bun to the length of the sausage)
- Ketchup
- Yellow mustard
- 4 oz Pita chips
- 1 cup Hummus
Homemade Lemonade
- 1 cup Lemon juice fresh squeezed
- 16 oz Water
- 2 TBSP Sugar use to taste
- Ice cubes
Instructions
- Heat the oil in a skillet over medium heat. Saute the peppers and onions until tender and golden brown. Remove the skillet from the heat. Season with salt and pepper to taste.
- Preheat a grill or grill pan on medium heat. Grill the sausage, getting a nice char on all sides to an internal temperature of 155°F (68°C) using a thermometer.
- Place the cooked sausage link on the roll, and top with sauteed peppers, onions, ketchup, and mustard.
- Mix the ingredients for the lemonade. Serve over ice if desired.
- Serve the grilled sausage sandwiches with pita chips and hummus and lemonade.
