Ingredients
Mexican Street Tacos
- 1 tsp Ground cumin
- 1 tsp Chili powder
- 1/2 tsp Paprika
- 1/2 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 8 oz Chicken breast boneless skinless diced
- 1 tsp Vegetable oil
- 4 Soft taco shells
- 1/2 cup Onion diced
- ½ cup Romaine lettuce shredded
- ½ cup Mexican blend cheese shredded
- ½ cup Tomato diced
Chips and Guacamole
- 2 Avocados
- 1/4 cup Tomato diced
- 2 TBSP Red onion finely chopped
- 1 TBSP Lime juice freshly squeezed
- 1 TBSP Fresh cilantro chopped
- Salt and pepper to taste
- 2 oz Tortilla chips
Margarita Mocktail
- 1 TBSP Honey
- 12 oz Sparkling water
- 8 oz Orange juice
- 2 TBSP Lime juice as needed to taste
- 2 wedges Lime for garnish, optional
Instructions
- In a small bowl, combine the ground cumin, chili powder, paprika, garlic powder, salt, and pepper. Rub the spice mixture with the chicken.
- In a large skillet, heat the vegetable oil over medium heat. Add the chicken and saute to an internal temperature of 160°F (71°C). Set aside.
- Prepare the guacamole: Cut the avocados in half and remove the pits. Scoop the flesh into a bowl and mash with a fork until desired consistency. Add the diced tomato, red onion, lime juice, chopped cilantro, salt, and pepper. Mix well.
- Mix the honey, sparkling water, orange juice, and lime juice for the margarita mocktails. Make sure to dissolve the honey by stirring vigorously. Serve over ice if desired and with a garnish of lime wedges.
- Warm the taco shells in a pan over medium heat for about 30 seconds on each side.
- Layer the tacos shells with chicken, onions, lettuce, cheese, and tomato.
- Serve with chips and guac and margarita mocktail.
