Ingredients

Cucumber Water:

  • ½ Cucumber thinly sliced
  • 24 oz Water

Tomato Soup

  • 1 TBSP Extra-virgin olive oil plus more for drizzling
  • 1 TBSP Butter
  • 1/4 cup Onion rough chopped
  • 2 cloves Garlic minced
  • 1 cup Chicken broth
  • 1/3 cup Heavy cream
  • 1/2 cup Crushed tomatoes
  • 1/2 cup Canned diced tomato
  • 1/4 tsp Fresh thyme minced
  • 1/3 TBSP Sugar

Seasoning

  • Salt to taste
  • Black pepper to taste

Grilled Ham and Cheese:

  • 4 slices Your choice of bread
  • 4 slices Deli ham
  • 4 slices Your choice of cheese (cheddar; Swiss; or your preference)
  • 2 TBSP Butter

Cheese and Crackers:

  • Your choice of cheese block cheese cut into slices (cheddar, gouda, etc.)
  • Crackers

Instructions

  • Prep the ingredients per the instructions above.
  • Prepare Cucumber Water: In a pitcher, combine thinly sliced cucumber with water. Refrigerate for at least 10 minutes to infuse the water with cucumber flavor.
  • Prepare the tomato soup: Add the olive oil and butter to a soup pot over medium heat. Once the butter has melted, add the onion and sauté it for 5 - 7 minutes. Add the garlic and saute for 30 seconds.
  • Add the broth, cream, tomatoes, and thyme. Bring to a simmer for about 15 minutes. Season with salt and pepper to taste. Stir to incorporate everything together. Remove from the heat.
  • Place in a blender. Blend until smooth.
  • Layer the bread with ham and cheese.
  • Top with the remaining bread slices to form sandwiches.
  • Butter the outsides of the sandwiches.
  • Heat a skillet or griddle over medium heat.
  • Place the sandwiches on the skillet and cook for about 3-4 minutes on each side, until golden brown and the cheese is melted.
  • Remove from heat and slice the sandwiches diagonally.
  • Assemble Cheese and Crackers: Arrange assorted cheese slices or blocks on a serving plate alongside crackers of your choice.
  • Serve the grilled ham and cheese sandwiches with tomato soup, cheese and crackers, and cucumber-infused water.
