Ingredients
Cucumber Water:
- ½ Cucumber thinly sliced
- 24 oz Water
Tomato Soup
- 1 TBSP Extra-virgin olive oil plus more for drizzling
- 1 TBSP Butter
- 1/4 cup Onion rough chopped
- 2 cloves Garlic minced
- 1 cup Chicken broth
- 1/3 cup Heavy cream
- 1/2 cup Crushed tomatoes
- 1/2 cup Canned diced tomato
- 1/4 tsp Fresh thyme minced
- 1/3 TBSP Sugar
Seasoning
- Salt to taste
- Black pepper to taste
Grilled Ham and Cheese:
- 4 slices Your choice of bread
- 4 slices Deli ham
- 4 slices Your choice of cheese (cheddar; Swiss; or your preference)
- 2 TBSP Butter
Cheese and Crackers:
- Your choice of cheese block cheese cut into slices (cheddar, gouda, etc.)
- Crackers
Instructions
- Prep the ingredients per the instructions above.
- Prepare Cucumber Water: In a pitcher, combine thinly sliced cucumber with water. Refrigerate for at least 10 minutes to infuse the water with cucumber flavor.
- Prepare the tomato soup: Add the olive oil and butter to a soup pot over medium heat. Once the butter has melted, add the onion and sauté it for 5 - 7 minutes. Add the garlic and saute for 30 seconds.
- Add the broth, cream, tomatoes, and thyme. Bring to a simmer for about 15 minutes. Season with salt and pepper to taste. Stir to incorporate everything together. Remove from the heat.
- Place in a blender. Blend until smooth.
- Layer the bread with ham and cheese.
- Top with the remaining bread slices to form sandwiches.
- Butter the outsides of the sandwiches.
- Heat a skillet or griddle over medium heat.
- Place the sandwiches on the skillet and cook for about 3-4 minutes on each side, until golden brown and the cheese is melted.
- Remove from heat and slice the sandwiches diagonally.
- Assemble Cheese and Crackers: Arrange assorted cheese slices or blocks on a serving plate alongside crackers of your choice.
- Serve the grilled ham and cheese sandwiches with tomato soup, cheese and crackers, and cucumber-infused water.
