Prep the ingredients per the instructions above.
Prepare Cucumber Water: In a pitcher, combine thinly sliced cucumber with water. Refrigerate for at least 10 minutes to infuse the water with cucumber flavor.
Prepare the tomato soup: Add the olive oil and butter to a soup pot over medium heat. Once the butter has melted, add the onion and sauté it for 5 - 7 minutes. Add the garlic and saute for 30 seconds.
Add the broth, cream, tomatoes, and thyme. Bring to a simmer for about 15 minutes. Season with salt and pepper to taste. Stir to incorporate everything together. Remove from the heat.
Place in a blender. Blend until smooth.
Layer the bread with ham and cheese.
Top with the remaining bread slices to form sandwiches.
Butter the outsides of the sandwiches.
Heat a skillet or griddle over medium heat.
Place the sandwiches on the skillet and cook for about 3-4 minutes on each side, until golden brown and the cheese is melted.
Remove from heat and slice the sandwiches diagonally.
Assemble Cheese and Crackers: Arrange assorted cheese slices or blocks on a serving plate alongside crackers of your choice.
Serve the grilled ham and cheese sandwiches with tomato soup, cheese and crackers, and cucumber-infused water.
