Grilled Ham and Cheese

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 8 slices Sourdough bread or bread of your choice
  • 4 oz Gruyere cheese sliced
  • 2 cups Baby spinach
  • 12 oz Deli ham sliced thin
  • 12 slices Tomato
  • 4 Pickles halved

Instructions

  • Heat the oil in a non-stick pan over medium-low heat. Layer the bread with a slice of cheese, spinach, ham, tomatoes. Season with salt and pepper, add another slice of cheese. Top with the other slice of bread and place in the pan.
  • Cover with a lid (watch the heat, make sure the bread isn't burning). When the cheese is melted and the bread is nicely grilled to golden brown, flip the sandwich to the other side and repeat.
  • Cut in half and serve with pickles.
