Ingredients

Greek Chicken Souvlaki Wrap

  • 1/4 cup Greek yogurt
  • 1/2 Lemon juiced
  • 2 cloves Garlic minced
  • 2 TBSP Extra-virgin olive oil
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 8 oz Chicken breast boneless skinless
  • 2 Pita bread
  • ½ cup Onion sliced
  • ½ cup Tomato sliced
  • ½ cup Feta cheese crumbled

Tzatziki sauce

  • 1/2 cup Cucumber rough chopped
  • 1/3 cup Greek yogurt
  • 1 clove Garlic
  • 1 tbsp Extra-virgin olive oil
  • 1/2 TBSP White vinegar
  • 1/2 TBSP Fresh dill
  • 1/4 tsp Salt

Pita Chips and Hummus

  • 4 oz Pita chips
  • 1 cup Hummus

Kombucha

  • 24 oz Kombucha

Instructions

  • Prep all of the ingredients per the instructions above.
  • If using wooden skewers, soak in water for 30 minutes.
  • In a large bowl, combine Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, dried thyme, paprika, salt, and pepper.
  • Cut chicken breasts into 1-inch cubes and add to the marinade. Toss to coat all chicken pieces evenly. Cover and place in the fridge to marinate for at least 30 minutes.
  • Make Tzatziki sauce: Add the cucumber, yogurt, garlic, olive oil, vinegar, dill, and salt to a blender or food processor. Blend until smooth. Add more salt to taste. Set aside in the refrigerator.
  • Thread chicken pieces onto skewers. Preheat the grill or grill pan on medium-high heat and drizzle with oil.
  • Place skewers on the grill, turning on all sides for about 8 - 12 minutes or until chicken is fully cooked (160°F / 71C).
  • Warm up the pita bread on the grill or stovetop. Spread tzatziki over the entire surface of the pita.
  • Remove chicken pieces from the skewer and place them on top of the pita. Top with sliced onion, tomato, and feta.
  • Fold in half like a taco and enjoy with extra tzatziki.
  • Serve chicken wrap with, pita chips, hummus and kombucha.
