Ingredients
Greek Chicken Souvlaki Wrap
- 1/4 cup Greek yogurt
- 1/2 Lemon juiced
- 2 cloves Garlic minced
- 2 TBSP Extra-virgin olive oil
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1/2 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 8 oz Chicken breast boneless skinless
- 2 Pita bread
- ½ cup Onion sliced
- ½ cup Tomato sliced
- ½ cup Feta cheese crumbled
Tzatziki sauce
- 1/2 cup Cucumber rough chopped
- 1/3 cup Greek yogurt
- 1 clove Garlic
- 1 tbsp Extra-virgin olive oil
- 1/2 TBSP White vinegar
- 1/2 TBSP Fresh dill
- 1/4 tsp Salt
Pita Chips and Hummus
- 4 oz Pita chips
- 1 cup Hummus
Kombucha
- 24 oz Kombucha
Instructions
- Prep all of the ingredients per the instructions above.
- If using wooden skewers, soak in water for 30 minutes.
- In a large bowl, combine Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, dried thyme, paprika, salt, and pepper.
- Cut chicken breasts into 1-inch cubes and add to the marinade. Toss to coat all chicken pieces evenly. Cover and place in the fridge to marinate for at least 30 minutes.
- Make Tzatziki sauce: Add the cucumber, yogurt, garlic, olive oil, vinegar, dill, and salt to a blender or food processor. Blend until smooth. Add more salt to taste. Set aside in the refrigerator.
- Thread chicken pieces onto skewers. Preheat the grill or grill pan on medium-high heat and drizzle with oil.
- Place skewers on the grill, turning on all sides for about 8 - 12 minutes or until chicken is fully cooked (160°F / 71C).
- Warm up the pita bread on the grill or stovetop. Spread tzatziki over the entire surface of the pita.
- Remove chicken pieces from the skewer and place them on top of the pita. Top with sliced onion, tomato, and feta.
- Fold in half like a taco and enjoy with extra tzatziki.
- Serve chicken wrap with, pita chips, hummus and kombucha.
