Prep all of the ingredients per the instructions above.
If using wooden skewers, soak in water for 30 minutes.
In a large bowl, combine Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, dried thyme, paprika, salt, and pepper.
Cut chicken breasts into 1-inch cubes and add to the marinade. Toss to coat all chicken pieces evenly. Cover and place in the fridge to marinate for at least 30 minutes.
Make Tzatziki sauce: Add the cucumber, yogurt, garlic, olive oil, vinegar, dill, and salt to a blender or food processor. Blend until smooth. Add more salt to taste. Set aside in the refrigerator.
Thread chicken pieces onto skewers. Preheat the grill or grill pan on medium-high heat and drizzle with oil.
Place skewers on the grill, turning on all sides for about 8 - 12 minutes or until chicken is fully cooked (160°F / 71C).
Warm up the pita bread on the grill or stovetop. Spread tzatziki over the entire surface of the pita.
Remove chicken pieces from the skewer and place them on top of the pita. Top with sliced onion, tomato, and feta.
Fold in half like a taco and enjoy with extra tzatziki.
Serve chicken wrap with, pita chips, hummus and kombucha.
