Prep all ingredients per the instructions above.
If using wooden skewers, soak in water for 30 minutes.
In a large bowl, combine Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, dried thyme, paprika, salt, and pepper. Marinate the the chicken for 10 minutes.
Make tzatziki sauce: Add the cucumber, yogurt, garlic, olive oil, vinegar, dill, and salt to a blender or food processor. Blend until smooth. Add more salt to taste. Set aside in the refrigerator.
Preheat the grill or grill pan on medium heat and drizzle with oil.
Grill the chicken on both sides to an internal temperature of 160°F / 71ºC.
Spread tzatziki over the wrap.
Top with chicken, sliced onion, lettuce, tomato, and feta.
Fold in one end and roll up.
Serve with pita chips, hummus, and kombucha.
