Ingredients

Home fries

  • 2 cups Potatoes diced
  • Butter or cooking oil
  • Salt to taste
  • Black pepper to taste

Eggs

  • 4 Eggs
  • Butter or cooking oil
  • Salt to taste
  • Black pepper to taste

Biscuits with honey

  • 2 Biscuits
  • 2 TBSP Honey

Fruit

  • 2 cups Fresh fruit of your choice (berries sliced oranges etc.)

Orange juice

  • 16 oz Orange juice

Instructions

  • Wash and dice the potatoes into small cubes.
  • Heat a skillet over medium-high heat with some cooking oil or butter.
  • Add the diced potatoes to the skillet and season with salt and pepper.
  • Cook the potatoes, stirring occasionally, until they are golden brown and crispy, about 15-20 minutes. Set aside.
  • While the home fries are cooking, prepare the eggs.
  • Heat a non-stick skillet over medium heat and add a small amount of oil or butter.
  • Crack the eggs into the skillet and cook them to your preference (sunny side up, over easy, scrambled, etc). Season with salt and pepper.
  • Heat the biscuits in the oven according to package instructions or until warm.
  • Serve the eggs with home fries, biscuit drizzled with honey, fruit, and orange juice.
