Flank Steak w/ Sun dried Tomato Coulis

Ingredients

  • 2 tbsp Lime juice
  • 2 tbsp Reduced-sodium soy sauce
  • 1 pound Flank steak
  • 2 cloves Garlic peeled
  • 1 cup Fresh parsley whole leaves stems discarded
  • 4 tbsp Sun dried tomatoes
  • 1 tbsp Lemon juice
  • 1/4 cup Chicken broth
  • 4 slices Crusty bread

Instructions

  • Mix the lime juice and soy sauce in a large bowl and place the flank steak inside, coat well season with salt and pepper and set aside.
  •  In a food processor or blender, add the garlic, parsley, sun dried tomatoes, lemon juice, and broth. Pulse until smooth. Season with salt and pepper to taste.  
  • Preheat a grill or cast iron skillet on the stovetop on medium heat and cook the flank steak to the desired doneness using a thermometer (see below).
  • Allow flank to rest for 5 minutes before slicing. Slice thin against the grain. Serve the sauce over top. Season with salt and pepper to your desired taste. Serve with crusty bread.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
