Ingredients

  • 2 medium Potatoes
  • 3 tbsp Extra-virgin olive oil
  • 4 tbsp Crumbled blue cheese

Instructions

  • Preheat the oven to 400 degrees.
  • Using a knife make many thin slits across the length of the potato, being careful not to go all the way thru to the bottom. The potato should remain intact (it should resemble an accordion)
  • Carefully spread the slits apart and season with salt and pepper generously. Drizzle with olive oil on top and in the slits as well.
  • Place on a foil lined baking sheet and bake in the oven for about 35 - 40 minutes. Check the tenderness of the potato.
  • Once tender spoon the blue cheese into the slits of the potato and bake for another 5 minutes.
  • Cut in half to portion and serve.
