Fettuccini Pomodoro w/ Chicken

Ingredients

  • 1/2 lb Fettuccine pasta
  • 3/4 lb Chicken breast boneless skinless cut into bite size pieces
  • 1/2 cup chicken broth
  • 2 tbsp Extra-virgin olive oil
  • 1/2 onion chopped
  • 3 cloves garlic minced
  • 2 tomatoes diced
  • 1/4 tsp Red pepper flakes
  • 3 tbsp basil thinly sliced
  • 3 tsp Parmesan cheese grated

Instructions

  • In a large pot of boiling salted water, cook pasta according to package directions.
  • In a nonstick pan over medium heat, heat the oil. Add in the chicken and cook for 3- 4 minutes. Add onion and cook until soft, 4 more minutes. Add garlic and cook until fragrant, 1 minute more.
  • Add the tomatoes and cook until juices are released. Season with salt, pepper, and a pinch red pepper flakes. Add in chicken broth, reduce heat and let simmer for 10 minutes Add fettuccini. Toss to combine.
  • Garnish with basil and Parmesan before serving.
