Ingredients
Home fries
- 2 cups Potatoes peeled and diced
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- ¼ tsp Paprika
- 2 TBSP Extra-virgin olive oil
Seasoning
- Salt to taste
- Black pepper to taste
Sausage
- 4 Breakfast sausage patties
Toast with jam
- 2 slices Your choice of bread
- 2 TBSP Butter
- 2 TBSP Your choice of jam or preserves
Eggs
- Butter or cooking oil
- 4 Eggs
Orange juice
- 16 oz Orange juice
Instructions
- Preheat the oven to 400°F (200°C).
- While the oven is preheating, wash, peel, and dice the potatoes.
- Toss potatoes on a baking sheet with garlic powder, onion powder, and paprika. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Spread the potatoes out in a single layer on the baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- Heat a skillet over medium heat. Cook the sausage on both sides to an internal temperature of 160F (71C).
- Toast the bread slices until golden brown.
- Spread butter on the toasted bread slices and top with jam.
- Add butter or cooking oil to a skillet over medium heat. Crack the eggs into the hot skillet and cook the eggs as desired (i.e. scrambled, fried, sunny side up). Season with salt and pepper.
- Serve the eggs with home fries, sausage, and toast with jam. Enjoy with orange juice.
