Cottage Cheese Toast with Tomato and Onion
- 2 slices Your choice of bread
- ½ cup Cottage cheese
- 2 TBSP Red onion chopped
- 1 Tomato small, diced
- ½ tsp Extra-virgin olive oil
- Salt to taste
- Black pepper to taste
- ¼ tsp Dried oregano
Cottage Cheese Toast with Lox
- 2 slices Your choice of bread
- 2 oz Lox (smoked salmon)
- ½ cup Cottage cheese
- 2 TBSP Red onion chopped
- 1 tsp Fresh dill roughly chopped
- Salt to taste
- Black pepper to taste
Fruit
- 2 cups Fresh fruit prepared accordingly
Instructions
- Brew and prepare the coffee according to your preference.
- Prepare the ingredients per the instructions above.
- Toast the bread slices until they reach your desired level of crispiness.
- Spread a generous amount of cottage cheese evenly over each slice of toasted bread.
- For the cottage cheese toast with tomato: Spread the chopped onion and diced tomato evenly over the cottage cheese. Drizzle a little olive oil over the cottage cheese layer. Sprinkle it with sea salt, black pepper, and oregano to taste.
- For the cottage cheese toast with lox: Place lox on top of the cottage cheese. Place the thinly sliced onion on the lox. Garnish with dill, and season with salt and pepper to taste.
- Portion the fruit.
- Serve the cottage cheese toast alongside fruit and coffee.
