Eggs, Bacon, and Home Fries

Ingredients

Home Fries

  • 1.5 cups Potatoes peeled and diced small
  • 2 TBSP Extra-virgin olive oil
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1/4 cup Ketchup

Seasoning

  • Salt
  • Black pepper

Bacon

  • 4 strips Bacon

Eggs

  • 1 TBSP Butter
  • 4 Eggs

Toast

  • 2 slices Your choice of bread lightly toasted
  • 2 tsp Butter
  • 2 TBSP Your choice of jam

Orange juice

  • 16 oz Orange juice

Instructions

  • Prep the ingredients per the instructions above.
  • Place the potatoes into a saucepan and cover with water. Place over high heat. Bring to a boil and cook until tender. Then drain well.
  • Place the bacon in a skillet over medium low heat. Cook on both sides until golden brown and crispy. Set aside on paper towels to drain excess grease..
  • Cook the home fries: Heat the oil in a heavy-bottomed skillet. Saute the potato, seasoned with paprika, garlic powder, salt, and pepper, until golden brown. Adjust the salt to taste as needed.
  • Add the butter to a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm and yolks are runny. Season with salt and pepper to taste.
  • Toast the bread then spread them with butter and jam.
  • Serve the eggs with sausage, home fries with ketchup, toast, and orange juice.
