Home Fries
- 1.5 cups Potatoes peeled and diced small
- 2 TBSP Extra-virgin olive oil
- 1/2 tsp Paprika
- 1/2 tsp Garlic powder
- 1/4 cup Ketchup
Seasoning
- Salt
- Black pepper
Bacon
- 4 strips Bacon
Eggs
- 1 TBSP Butter
- 4 Eggs
Toast
- 2 slices Your choice of bread lightly toasted
- 2 tsp Butter
- 2 TBSP Your choice of jam
Orange juice
- 16 oz Orange juice
Instructions
- Prep the ingredients per the instructions above.
- Place the potatoes into a saucepan and cover with water. Place over high heat. Bring to a boil and cook until tender. Then drain well.
- Place the bacon in a skillet over medium low heat. Cook on both sides until golden brown and crispy. Set aside on paper towels to drain excess grease..
- Cook the home fries: Heat the oil in a heavy-bottomed skillet. Saute the potato, seasoned with paprika, garlic powder, salt, and pepper, until golden brown. Adjust the salt to taste as needed.
- Add the butter to a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm and yolks are runny. Season with salt and pepper to taste.
- Toast the bread then spread them with butter and jam.
- Serve the eggs with sausage, home fries with ketchup, toast, and orange juice.
