  • Heat the oil in a nonstick pan on medium heat. Sauté the chicken sausage, mushrooms, and peppers until soft and golden brown.
  • Add the eggs to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 minute. Using a spatula, gently lift a corner of the egg up and tilt pan to allow any uncooked egg to flow underneath. Repeat this procedure until the remaining egg is cooked and no longer runny. Add the cheese and fold the omelet in half.
  • Lightly toast the croissants.
  • Portion the eggs on the croissant, cut in half and serve with plums.
