Toast the bread slices until they reach your desired level of crispiness.
Spread a generous amount of cottage cheese evenly over each slice of toasted bread.
For the cottage cheese toast with tomato: Spread the chopped onion and diced tomato evenly over the cottage cheese. Drizzle a little olive oil over the cottage cheese layer. Sprinkle it with sea salt, black pepper, and oregano to taste.
For the cottage cheese toast with lox: Place lox on top of the cottage cheese. Place the thinly sliced onion on the lox. Garnish with dill, and season with salt and pepper to taste.
Portion the fruit.
Serve the cottage cheese toast alongside fruit and coffee.
