Ingredients
- 3/4 cup All-purpose flour (spoon & leveled)
- 1/4 tsp Baking soda
- 1/4 cup Unsweetened shredded coconut
- pinch Salt
- 6 tbsp Butter softened to room temperature
- 1/2 cup Brown sugar
- 1 Egg
- 1 tsp Vanilla extract
- 1 cups Rolled oats
- 3/4 cup Chocolate chips
Instructions
- Whisk the flour, baking soda, coconut, and salt together in a medium bowl. Set aside.
- In a large bowl, using an electric mixer or by hand using a whisk, beat the butter until smooth. Add the brown sugar and beat until creamy. Add the egg and vanilla, and beat until combined. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients and mix until combined. Beat in the oats and chocolate chips. Dough will be thick and sticky.
- Preheat oven to 350°F (177°C). Line baking sheet(s) with parchment paper or silicone baking mats. Set aside.
- Scoop the cookie dough, about 1 heaping teaspoon of dough per cookie, and place 2 inches apart on the baking sheets. Bake for 12-14 minutes or until lightly browned on the sides. The centers will look very soft.
- Remove from the oven and allow cookies to cool before serving.
