Ingredients
- 6 oz Elbow macaroni or pasta of your choice
- 1 pound Ground beef
- 1/2 Red onion diced, save some for garnish if desired
- 1 Green bell pepper seeded and diced
- 3 cloves Garlic minced
- 1 tbsp Chili powder or more if you desire spicier
- 1 tbsp Ground cumin
- 2 tbsp Paprika
- 1 cup Crushed tomatoes
- 3 cups Chicken broth
- 2 oz Cheddar cheese shredded
- 2 tbsp Fresh cilantro
- 1/2 Jalapeño pepper sliced, optional
Instructions
- In a boiling pot of salted water, cook the pasta according to the instructions on the package. Drain well and set aside.
- In a large pot over medium heat, brown the ground beef while breaking it into smaller pieces with a spatula. Once partially browned, add in onions, peppers, and garlic.
- Cook until the meat is fully browned. Then add in the chili powder (add chili powder a little at a time throughout the cooking process for a mild spicy flavor; taste before you add more), cumin, and paprika. Let cook for another 5 minutes while stirring together.
- Stir in crushed tomato, chicken broth, and season with salt and pepper. Cover with a lid and simmer for 30 minutes. Taste and adjust the seasoning with salt and pepper.
- Stir in the pasta, garnish with cheddar cheese, cilantro, red onion and jalapeno (if using).
