Ingredients

  • 6 oz Elbow macaroni or pasta of your choice
  • 1 pound Ground beef
  • 1/2 Red onion diced, save some for garnish if desired
  • 1 Green bell pepper seeded and diced
  • 3 cloves Garlic minced
  • 1 tbsp Chili powder or more if you desire spicier
  • 1 tbsp Ground cumin
  • 2 tbsp Paprika
  • 1 cup Crushed tomatoes
  • 3 cups Chicken broth
  • 2 oz Cheddar cheese shredded
  • 2 tbsp Fresh cilantro
  • 1/2 Jalapeño pepper sliced, optional

Instructions

  • In a boiling pot of salted water, cook the pasta according to the instructions on the package. Drain well and set aside.
  • In a large pot over medium heat, brown the ground beef while breaking it into smaller pieces with a spatula. Once partially browned, add in onions, peppers, and garlic.
  • Cook until the meat is fully browned. Then add in the chili powder (add chili powder a little at a time throughout the cooking process for a mild spicy flavor; taste before you add more), cumin, and paprika. Let cook for another 5 minutes while stirring together.
  • Stir in crushed tomato, chicken broth, and season with salt and pepper. Cover with a lid and simmer for 30 minutes. Taste and adjust the seasoning with salt and pepper.
  • Stir in the pasta, garnish with cheddar cheese, cilantro, red onion and jalapeno (if using).
