In a boiling pot of salted water, cook the pasta according to the instructions on the package. Drain well and set aside.
In a large pot over medium heat, brown the ground beef while breaking it into smaller pieces with a spatula. Once partially browned, add in onions, peppers, and garlic.
Cook until the meat is fully browned. Then add in the chili powder (add chili powder a little at a time throughout the cooking process for a mild spicy flavor; taste before you add more), cumin, and paprika. Let cook for another 5 minutes while stirring together.
Stir in crushed tomato, chicken broth, and season with salt and pepper. Cover with a lid and simmer for 30 minutes. Taste and adjust the seasoning with salt and pepper.
Stir in the pasta, garnish with cheddar cheese, cilantro, red onion and jalapeno (if using).
