Ingredients
- 1 lb Chicken breast boneless skinless butterflied
- 6 cups Romaine lettuce chopped
Caesar Dressing
- 1/3 cup Extra-virgin olive oil
- 1 clove Garlic minced
- 3 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tsp Lemon juice
- 2 Tbsp Parmesan cheese grated
- 1 tsp Anchovy paste
Instructions
- Preheat grill or grill pan on top of stove. Season both sides of the chicken with salt and pepper and cook chicken 3 - 5 minutes on each side or until an internal temperature of 160 degrees is achieved. Cut into strips and serve on top of salad.
- In a bowl whisk together olive oil, garlic, dijon, Worcestershire, lemon juice, parmesan, and anchovy paste (if using). Season with salt and pepper to taste.
- Serve the chicken over the lettuce and spoon the dressing on top.
