Ingredients

  • 1 lb Chicken breast boneless skinless butterflied
  • 6 cups Romaine lettuce chopped

Caesar Dressing

  • 1/3 cup Extra-virgin olive oil
  • 1 clove Garlic minced
  • 3 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tsp Lemon juice
  • 2 Tbsp Parmesan cheese grated
  • 1 tsp Anchovy paste

Instructions

  • Preheat grill or grill pan on top of stove. Season both sides of the chicken with salt and pepper and cook chicken 3 - 5 minutes on each side or until an internal temperature of 160 degrees is achieved. Cut into strips and serve on top of salad.
  • In a bowl whisk together olive oil, garlic, dijon, Worcestershire, lemon juice, parmesan, and anchovy paste (if using). Season with salt and pepper to taste.
  • Serve the chicken over the lettuce and spoon the dressing on top.
