Preheat grill or grill pan on top of stove. Season both sides of the chicken with salt and pepper and cook chicken 3 - 5 minutes on each side or until an internal temperature of 160 degrees is achieved. Cut into strips and serve on top of salad.
In a bowl whisk together olive oil, garlic, dijon, Worcestershire, lemon juice, parmesan, and anchovy paste (if using). Season with salt and pepper to taste.
Serve the chicken over the lettuce and spoon the dressing on top.
