Ingredients
- 2 tbsp Extra-virgin olive oil
- 3 tbsp Onion chopped
- 4 cloves Garlic chopped
- 2 cups Carrots peeled and sliced
- 4 cups Chicken broth
- 1/4 cup Heavy cream
- 3 tsp Cornstarch dissolved in an equal amount of water
- Fresh cilantro garnish
- Balsamic glaze for drizzling
Instructions
- Heat the oil in a pot over medium heat. Sauté the onion and garlic until golden brown.
- Add the carrots and broth. Cover with a lid and bring to a simmer until the carrots are soft.
- Using a blender or immersion blender, purée the soup until smooth. Return to the pot and add the cream. Bring to a simmer. Taste and season with salt and pepper.
- (If needed, Slowly pour in the cornstarch slurry a little at a time until it becomes thick and smooth).
- Garnish with cilantro and drizzle of balsamic.
