Carrot Bisque

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 3 tbsp Onion chopped
  • 4 cloves Garlic chopped
  • 2 cups Carrots peeled and sliced
  • 4 cups Chicken broth
  • 1/4 cup Heavy cream
  • 3 tsp Cornstarch dissolved in an equal amount of water
  • Fresh cilantro garnish
  • Balsamic glaze for drizzling

Instructions

  • Heat the oil in a pot over medium heat. Sauté the onion and garlic until golden brown.
  • Add the carrots and broth. Cover with a lid and bring to a simmer until the carrots are soft.
  • Using a blender or immersion blender, purée the soup until smooth. Return to the pot and add the cream. Bring to a simmer. Taste and season with salt and pepper.
  • (If needed, Slowly pour in the cornstarch slurry a little at a time until it becomes thick and smooth).
  • Garnish with cilantro and drizzle of balsamic.
