Ingredients
- 4 slices Bacon chopped
- 1/4 cup Red onion chopped fine
- 1 tsp Brown sugar
- 8 Eggs beaten
- 1 Avocado pitted and diced
- 4 slices Sourdough bread toasted (or bread of your choice)
- 2 Peaches pitted and sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Add the bacon to a non-stick pan over medium heat. Cook until the bacon begins to brown then add in the onion. Saute until the onion softens. Add in the sugar and cook until the bacon is crispy. Remove the bacon and onion with a slotted spoon. Discard half of the leftover grease.
- Add the eggs and avocado into the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with pepper. Taste and add salt if needed.
- Lightly toast the bread.
- Serve the eggs over toast, top with bacon, serve with peach.
