Ingredients

Banana Nut Muffins

  • 2 Bananas ripe, mashed
  • ¼ cup Butter melted
  • ½ cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1 Egg beaten
  • 1 cup All-purpose flour
  • ½ tsp Baking soda
  • ½ tsp Baking powder
  • ¼ tsp Salt
  • ½ cup Walnuts chopped

Fruit

  • 2 cups Fresh fruit of your choice (berries; sliced kiwi; etc.)

Coffee

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Instructions

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a mixing bowl, combine mashed bananas, melted butter, granulated sugar, vanilla extract, and beaten egg. Mix well.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Gently fold in the chopped nuts into the muffin batter.
  • Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  • Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • While the muffins are baking, wash and prepare your choice of fresh fruit.
  • Brew a fresh pot of coffee or prepare coffee using your preferred method.
  • Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.
  • Arrange the banana nut muffins on a plate, serve with a side of fresh fruit, and pour a cup of hot coffee, prepared as desired.
