Banana Nut Muffins
- 2 Bananas ripe, mashed
- ¼ cup Butter melted
- ½ cup Granulated sugar
- 1 tsp Vanilla extract
- 1 Egg beaten
- 1 cup All-purpose flour
- ½ tsp Baking soda
- ½ tsp Baking powder
- ¼ tsp Salt
- ½ cup Walnuts chopped
Fruit
- 2 cups Fresh fruit of your choice (berries; sliced kiwi; etc.)
Coffee
- Coffee
- Your choice of sweetener
- Your choice of creamer
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a mixing bowl, combine mashed bananas, melted butter, granulated sugar, vanilla extract, and beaten egg. Mix well.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Gently fold in the chopped nuts into the muffin batter.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, wash and prepare your choice of fresh fruit.
- Brew a fresh pot of coffee or prepare coffee using your preferred method.
- Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.
- Arrange the banana nut muffins on a plate, serve with a side of fresh fruit, and pour a cup of hot coffee, prepared as desired.
