Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a mixing bowl, combine mashed bananas, melted butter, granulated sugar, vanilla extract, and beaten egg. Mix well.
Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Gently fold in the chopped nuts into the muffin batter.
Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center comes out clean.
While the muffins are baking, wash and prepare your choice of fresh fruit.
Brew a fresh pot of coffee or prepare coffee using your preferred method.
Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.
Arrange the banana nut muffins on a plate, serve with a side of fresh fruit, and pour a cup of hot coffee, prepared as desired.
