Ingredients
- 1/2 cup Cucumber sliced thin
- 2 tbsp Carrots shaved
- 2 tbsp Red onion shaved
- 1/2 cup Rice wine vinegar
- 1/2 tbsp Sweet chili sauce
- 1 tbsp Mayonnaise
- 1/2 tbsp Ketchup
- 2 Soft rolls lightly toasted
- 1/2 cup Spring mix
- 6 oz Deli roast beef sliced thin
- 2 tbsp Fresh cilantro
- 2 Pickle spears
- 1 oz Potato chips
Instructions
- Submerge the cucumber, carrots, and onion in a bowl with vinegar. Mix well and let sit until ready to use, (about 5 to 10 minutes). Drain well before using.
- In a bowl whisk together the sweet chili sauce, mayo, and ketchup. Season with salt and pepper to taste.
- Lightly toast the bread. Spread the mayo mixture onto both sides of the bread.
- Layer the bread with Spring mix, roast beef, pickled vegetables, and cilantro. Serve with pickle and chips.
