Ingredients

  • 1/2 cup Cucumber sliced thin
  • 2 tbsp Carrots shaved
  • 2 tbsp Red onion shaved
  • 1/2 cup Rice wine vinegar
  • 1/2 tbsp Sweet chili sauce
  • 1 tbsp Mayonnaise
  • 1/2 tbsp Ketchup
  • 2 Soft rolls lightly toasted
  • 1/2 cup Spring mix
  • 6 oz Deli roast beef sliced thin
  • 2 tbsp Fresh cilantro
  • 2 Pickle spears
  • 1 oz Potato chips

Instructions

  • Submerge the cucumber, carrots, and onion in a bowl with vinegar. Mix well and let sit until ready to use, (about 5 to 10 minutes). Drain well before using.
  • In a bowl whisk together the sweet chili sauce, mayo, and ketchup. Season with salt and pepper to taste.
  • Lightly toast the bread. Spread the mayo mixture onto both sides of the bread.
  • Layer the bread with Spring mix, roast beef, pickled vegetables, and cilantro. Serve with pickle and chips.
