Bagel and Oatmeal

Ingredients

  • 6 oz Chicken sausage links
  • 1 cup Oatmeal
  • 1 Apples peeled and diced small
  • 2 tbsp Brown sugar
  • 1 tbsp Maple syrup
  • 2 Everything bagel halved and toasted (or your choice of bagel)
  • 1 tsp Ground cinnamon

Vegetable Cream Cheese

  • 6 Baby carrots
  • 1/4 cup Celery roughly chopped
  • 2 tbsp Scallions roughly chopped
  • 1 clove Garlic
  • 6 tbsp Whipped cream cheese or substitute store bought Roasted Garlic Vegetable Cream Cheese

Instructions

  • For the chicken sausage: If raw, cook in a 400°F oven to an internal temperature of 160°F using a thermometer. 
    If already cooked: Place in a 400 degree oven until warmed through or slice and brown in a nonstick pan on medium heat.
    Place the garlic clove on the same pan in the oven to get it nicely browned.
  • In a pot, add the oatmeal, apples, brown sugar, maple syrup, and recommended amount of water on the packaging. Cook the oatmeal according to the directions on the package.
  • For the cream cheese: add the carrot, celery, scallions, and garlic clove to a blender or food processor. Pulse until finely chopped. Then fold together in a bowl with cream cheese.
  • Toast the bagel and spread the cream cheese on.
  • Sprinkle the oatmeal with cinnamon, serve with the bagel, and chicken sausage.
