Ingredients

Chipotle Mayo

  • 2 tsp Chipotle Sauce use more or less to your desired taste
  • 4 TBSP Mayonnaise
  • Salt to taste
  • Black pepper to taste

Wrap

  • 4 slices Bacon
  • 4 Eggs
  • 1/3 cup Cheddar cheese shredded
  • 2 x large Tortilla wraps

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • In a bowl, mix together the chipotle and mayo. Season to taste with salt and pepper and set aside.
  • Place the bacon in a large skillet over medium heat. Cook on both sides until golden brown and crisp.
  • Heat the oil in a non-stick pan over medium heat. Crack the eggs into the pan. Cook until the whites of the eggs set, then gently flip the eggs over using a spatula. Top with cheese and cook until melted, about 1 to 2 minutes.
  • Once the bacon is cooked, set aside on paper towels to drain any excess grease.
  • Spread the mayo on the wrap. Lay down the bacon and portion the eggs on top. Fold in the ends and roll tightly.
  • Serve: Cut the wrap in half and enjoy with orange juice.
