Ingredients
Fresh Squeezed Lemonade
- 1/2 cup Lemon juice fresh squeezed (about 2 - 4 lemons)
- 6 TBSP Sugar to taste
- 32 oz Water
Guacamole
- 1 Avocados pitted and diced
- pinch Ground cumin
- 1 tsp Fresh cilantro chopped
- 1/4 tsp Garlic powder
- 1/2 tsp Lime juice to taste
Lettuce Wrap
- 4 slices Bacon
- 12 leaves Romaine lettuce stem ends trimmed off
- 6 oz Deli ham
- 4 slices Swiss cheese
- 6 slices Tomato thinly sliced
- 1/2 cup Red onion sliced thin
- 2 oz Potato chips
- 2 Pickle spears
Instructions
- Make the lemonade: Mix lemon juice and sugar together. Stir until sugar is dissolved. Add water and stir until combined. Refrigerate until ready to serve. (use your desired amount of sugar to taste)
- Make the guacamole: Prep guacamole ingredients per the instructions above. In a bowl, mash the avocado with a fork until smooth. Add the remaining ingredients and stir. Season with salt and pepper to taste. Add more lime juice to taste if desired. Refrigerate until you are ready to use.
- Lay the bacon in a skillet over medium heat. Cook on both sides until golden brown and crispy. Set aside on paper towels to drain excess grease.
- Place a 12-inch parchment paper square on your work surface. Layer 6 large lettuce leaves on top, overlapping each other.
- On the lettuce leaves, layer the ham and cheese.
- Spread the guacamole on top, then add the tomato, onion, and bacon.
- Roll the lettuce wrap sandwich as tightly as you can, using the parchment paper as your guide, much like you would use a sushi mat to make a sushi roll.
- When the lettuce is completely rolled, wrap the parchment paper tightly around it and tuck it underneath the roll. Use a serrated knife to cut the lettuce wrap sandwich in half.
- Serve lettuce wrap with chips, pickle, and fresh lemonade (over ice if desired).
