Ingredients
Breakfast Apple Crisp
- 2 Apples cored and diced
- ½ tsp Cornstarch
- 1 tsp Cinnamon
- 1 ½ TBSP Sugar
- ½ cup Quick oats
- 1 ½ TBSP Maple syrup
Eggs
- 4 Eggs beaten
- 1 TBSP Butter
- Salt to taste
- Black pepper to taste
- 2 slices Your choice of bread optional
Iced coffee
- Coffee
- Your choice of creamer
- Your choice of sweetener
- Ice cubes
Instructions
- Preheat the oven to 350°F (177°C). Lightly spray small ramekins with cooking spray.
- While the oven preheats, brew a strong cup of coffee and set aside to let cool.
- Place the apples in a large bowl. Add the cornstarch, ½ the cinnamon, and sugar. Stir to evenly coat all the apples. Divide the apples between the ramekins.
- In a separate bowl, combine the quick oats, remaining cinnamon, and maple syrup.
- Evenly spread the topping over the apples and bake for 30 min. Or until the apples are tender.
- While the apple crisp is cooling, prepare your eggs. Heat a little butter in a nonstick pan, add the eggs, season with salt and pepper, and cook until the whites are firm.
- Toast the bread if using.
- Place eggs on a plate with toast (if using). Add ice cubes to a glass and pour in cooled coffee and prepare to your liking. Enjoy alongside your warm apple crisp.
