Preheat the oven to 350°F (177°C). Lightly spray small ramekins with cooking spray.
While the oven preheats, brew a strong cup of coffee and set aside to let cool.
Place the apples in a large bowl. Add the cornstarch, ½ the cinnamon, and sugar. Stir to evenly coat all the apples. Divide the apples between the ramekins.
In a separate bowl, combine the quick oats, remaining cinnamon, and maple syrup.
Evenly spread the topping over the apples and bake for 30 min. Or until the apples are tender.
While the apple crisp is cooling, prepare your eggs. Heat a little butter in a nonstick pan, add the eggs, season with salt and pepper, and cook until the whites are firm.
Toast the bread if using.
Place eggs on a plate with toast (if using). Add ice cubes to a glass and pour in cooled coffee and prepare to your liking. Enjoy alongside your warm apple crisp.
